
Marzuolo Truffle
TUBER BORCHII VITTADINI e TUBER ALBIDIUM PICO

Note: These two, well distincted, species are often wrongly confused and united under the same name of “marzuolo truffle”, a generic denomination that indicates their peak season.
Peridium: Smooth for both. Ocra yellowish in the case of the T.B.V., reddish-brown for the T.A.P. Gleba: Light blonde to brownish, the T.B.V. presents few, large white veins, while the T.A.P. has slimmer, dense and more ramified veins.
Shape And Dimension: The T.B.V. usually develops a quite regular, roundish appearance, while the T.A.P. is generally more irregular and lumpy. Their shapes and dimensions are, although, greatly defined by characteristics of the ground they grew in.
Ripening Season: From the middle of winter through the middle of Spring.
Picking Season: From January 10 to April 15.
Scent: The two species share a similar aromatic spectrum, with some mild differences; while the T.B.V. has a stronger, but less persistent smell, the T.A.P. is characterized by a milder, but longer smell.
Why Buy It: They are the only variety of white truffle available at the beginning of each year, and thanks to their peak season being in a commercially inactive period of the year, they represent a good value for the money and a more accessible way to experience a white truffle.
