
Scorzone Truffle
TUBER AESTIVUM

Peridium: Black, characterised by coarse, protruding, pointed lumps.
Gleba: Hazelnut brown with yellowish shades, crossed by largely ramified veins that can vary in dimension.
Shape and Dimension: Generally Roundish. The Tuber Aestivum usually has a high average size, with some rare examples that can exceed a pound in weight.
Ripening season: Summer. It can only be picked from June 1 to August 31.
Scent: Like its relative, the Tuber Uncinatum, it resembles the smell of hazelnuts, with
Porcini Mushroom notes.
Additional Information: Where present, the plant it bonded to creates a circle of burnt grass at the base of its trunk.
Why Buy It: While representing an economically accessible variety, it still benefits from having excellent organoleptic qualities. It’s also one of the only truffles that well lasts a fairly long time after it’s been picked. Thanks to these characteristics, the Tuber Aestivum is living a strong rise in use in the world of gastronomy.
