
Smooth Black Truffle
TUBER MACROSPORUM

Peridium: brown-ish red or dark gray, with flat, irregular, polygonally-shaped lumps.It can sometimes present some rusty-looking spots.
Gleba: Off-white to brown-ish to rusty brown, with quite large, numerous, white veins that slightly darken if they come in contact with air.
Shape and dimension: Globular to subglobose. 1-6 cm in diameter.
Ripening season: From September through December.
Scent: Aromatic, with slight hints of garlic, it vaguely resembles the smell of the Tuber Magnatum (fine white truffle).
Additional information: of hypogean species, it produces more truffles in the same spot. It shares its habitat with the Tuber magnatum, compared to which, however, better tolerates drought periods.
Why Buy It: While not wildly known, its organoleptic similarities to the more valuable Tuber Magnatum make it appreciated among the connoisseurs.
