
Black Moscato Truffle
TUBER BRUMALE MOSCHATUM

Peridium: Finely lumpy, with low, flat, polygonal lumps (usually smaller than the ones of the Melanosporum) that easily come off the gleba.
Gleba: It tends to look more light brown than gray-ish and presents large, lightly colored veins
Shape and Dimension: The surface is quite smooth and has hardly notable lumps. It’s a small truffle, it usually doesn’t exceed the dimensions of a walnut.
Ripening season: Late fall through early spring, it can only be picked from the 15th of November to the 15th of March
Scent: Very intense smell, it resembles that of moss. It has a mild spicy flavor.
Additional information: It mainly differs from the Tuber Brumale by having a more easily detachable peridium, that comes off in large pieces, leaving the gleba partially exposed.
Why Buy It: While it’s part of the same family as the Tuber Brumale, it’s simply an all-around better truffle.
